Check that ServerName is set correctly in /etc/cups/client.conf on the
desktop; if the client.conf is missing, create one with a single
'ServerName' line:

Many desktop installations (like the default Ubuntu install) set up a
full CUPS server locally, and then talk to network printers themselves
(discovering them via avahi). In that case, printers would disappear if
something went wrong with the networking/discovery of the printer - this
happened to me at work recently when we moved offices, and suddenly the
printer was on a different subnet to our desktops!

If that was the problem, then it should be possible to uninstall the
CUPS server from the desktop entirely (just leaving 'cups-client', in
Debian-speak).

If not... erm... check the logs on both the server and the desktop.
