Hi Adam,

The simplest answer is to get the box to automatically log in a user.
This means there will be a running VNC server to connect to. You may
find as I did that running headless means it detects a lack of monitor
and starts up in 800x600 mode.
It might suit you to set up a VNC server that starts on bootup there are
quite a few tutorials on this, here is one:

You can also set up the linux box as a terminal server by installing
ltsp-server-standalone from synaptic, once set up (you may have a bit of
fiddling with DHCP to do) you can set up diskless workstations to boot
off the network.
