The SCART standard optionally includes S-Video, Composite & RGB. You
could either try and get a cable to help break it out or try and make
one yourself. In my experience these camera's are 'Composite', which
could cause some connecting to your card if it does not bundle a
converter for composite.

Personally i would consider using the application 'webcam' it's in most
distro's repos. The use is described here, for a similar purpose:
