It depends on what you are trying to protect against or use it for.
Do you wish to store data on them that needs to be kept secret?
For example, the seed of a one time password generator.

Some just store data like a USB memory stick, others can run "applications".

Generally, decide on your requirements, and get the cheapest card to
meet those requirements.
