By using details that are not passed as part of the headers.

The SMTP protocol specifies a envelope to, from, and the data.
The data can be completely unrelated to who it is actually being
delivered to or from.

Nowhere in the original headers does it mention my email address (the
final destination).
The email went through many servers with hampshire@??? as
the destination (see the last Received header).
Your mail client also, as a courtesy set the To: header to be the same
thing, but could just as easily be set to joe.bloggs@???. (Think
how BCC would work if it relied on the headers)

Note that once it hit mailman, the envelope to was changed to
dee@???, BUT the To: header was left untouched.
sendmail, also as a courtesy happens to log this in the Received header
but it is by no means guaranteed, and can be different for every server/MTA.
