If you want a Red Hat (or Centos) compatible-ish kernel package for
2.6.31, you could consider the rawhide source rpms from the fedora
project... That would at least let you see the patches and configs applied.
# yum --enablerepo=rawhide list kernel*
[...]
Available Packages
kernel.i686 2.6.31-23.fc12 rawhide
kernel-PAE.i686 2.6.31-23.fc12 rawhide
[...]
With the source RPMs from those you may have better luck - they include
any patches applied during the build process.
(with the added bonus that you could end up with a kernel RPM not just a
binary an modules, which can be easily installed and removed, creating
the initrd where appropriate)
